The Late Harvest Gewurztraminer was hand picked into small bins and pressed immediately. Natural dehydration increased concentration of sugar and flavors. The juice was cold fermented in a stainless steel tank over a period of 45 days. When the fermentation was stopped the remaining residual sugar level was 7.50 % by weight.
