| Production Notes: | Located 5 miles above the Columbia River atop the Horse Heaven Hills AVA, Champoux Vineyards is one of Washington States premiere vineyards. The vineyard is owned and operated by Paul and Judy Champoux. The fruit was harvested September 12th. The fruit was destemmed and crushed into a small open-top fermentor where the must was pumped over twice daily. Maceration lasted eight days, then the skins were gently pressed off and fermentation was completed in barrel. Malolactic fermentation occurred in 35% new French oak barrels adding a nice depth and complexity to the wine. While aging in oak barrels the wines were racked every three months to encourage natural clarification. |
