Production Notes: Just over half of the grapes for our first Insania White are sourced from the Klipsun Vineyard in the small Red Mountain appellation. Located in the eastern reaches of the Yakima Valley, the Red Mountain region is extremely arid, with very low rainfall and large diurnal temperature shifts. This desert-like climate produces intensely flavored wines and is a perfect match for Sauvignon Blanc and Semillon. The grapes were harvested over several weeks and whole-cluster pressed, allowed to settle and inoculated. The Semillon was fermented entirely in barrel to add depth and roundness, while the Sauvignon Blanc underwent a very cool fermentation to enhance aromatics. Gorgeous aromas of honeydew melon, apricot and juicy pear are mirrored in the palate. A crisp citrus backbone supports the luscious mouthfeel from the barrel fermentation.
Food Pairing: A cooperative project between Geoff Tate of Queensryche and Holly Turner, the winemaker for Three Rivers, the Insania white blend is perfect for sipping before dinner or paired with creamy cheeses, grilled halibut or pasta primavera.
